Friday Letters 63

Happy Friday Y'all! 

I know it's been a while, but here's what we've been up to. 


-We've been keeping up with our 30 Days of Thankful list (well- I have been... Matt not so much)
-Day 15: Super Saturday and the lovely crafts I made
-Day 16: That we are about to see our house Elf Norman Baggins Ho in a couple of weeks
-Day 17: Cookies n' Cream Milkshakes
-Day 18: That 3 of my grad school applications are submitted
-Day 19: Learning Korean and being able to read this whole page
-Day 20: The education I received
-Day 21: Date Nights
-Day 22: My husband and the wonderful trip he planned for us
-Day 23: The cute wedding ducks we got in Insadong

- We made a mini Thanksgiving dinner for ourselves this week 
- We celebrated our 4th anniversary 
- We went to Seoul to celebrate 
- I worked on grad school stuff
- I only have a couple things to tweak and then just have to make sure the transcripts get to where they need to go... and then I'm done


Day 24: The thanksgiving card we got in the mail from my Abuela and Papa
Day 25: The strawberries we got in the store
Day 26: My marriage
Day 27: The thanksgiving meal we were able to prepare

Friday Letters 62

Happy Friday Y'all! 

{Are you surprised I'm actually posting on a Friday!} 

I hope your week went well. Man- am I glad to see the weekend. 

Here's what we've been up to this week. 

-Working on the never ending grad school applications
-Trying to Skype my mom 
-Reading Amy Poehler's book Yes Please. 
-Giving my middle school students a speaking and writing test
-Eating yummy Subway
-Continuing our thankful thoughts for the week
-Day 9: Lovely hiking outfits
-Day 10: Beautiful Buddha we got to see
- Day 11: Wonderful Korean holidays like Pepero Day
-Day 12: Inappropriate t-shirts my students wear
-Day 13: My wonderful sister Chantal 
-Day 14: My beautiful cousin Greyce 

This week was pretty good up until today. Today would have been my cousin's 27th birthday. Greyce passed away last January, and this was her first birthday since her passing. It hit me pretty hard today and man did I just want to be home. So today I've been fighting a lovely range of emotions. And I am feeling super homesick. I talked with my Abuela yesterday and I'm about to skype my cousin Jessie, so I know that will help. But man am I in a funk right now. 

Luckily, I have an amazing husband and we had a low key date night with pizza, and he let me watch The Santa Clause and eat cake. I usually am pretty strict with my rule of no Christmas movies before December 1, but when you are homesick you do what you gotta do. 



Tomorrow we have some plans to get out and about.

Project Life Update {2014}

Happy Thursday Y'al! 

I thought I would write up a post, so I wasn't too much of a slacker this week. But who am I kidding- until my grad school apps are finished- I am going to be a slacker. 

Today I thought I would share some of my recent pages from my digital Project Life book. 





I have been playing made catch up to make sure I get finished by the new year. I want to order my book soon after the new year, so I need to get cracking. Right now I just have to finish up Mongolia and work on a few pages for October and I'll be up to date. We will see how this goes.

Friday Letters 61

Happy Sunday Y'all! 

Hope your weekend was swell. Like last week- these letters are a bit late. 

But I'm here now- so here we go. 


Last Saturday marked the first of November. I love the month of November. This year- Matt and I are doing 30 days of #thankfulhos. We've been uploading a picture  a day about something we are thankful for. {PS- Are we friends on Instagram... cause we should be!} 

Here are my first 8 days: 
1. Seoul Temple
2. Mexican food 
3. Having the opportunity to travel to Mongolia
4. The beautiful fall leaves
5. Dr. Who
6. Study aboard in London
7. The month of November
8. Traveling to the Seoul Lantern Festival 


- Eating yummy waffle after waffle this week. Oh- they are so delicious
-Enjoying the beautiful fall leaves
-I am loving wearing my vest and scarfs. It is the perfect weather right now
- I caught up on my journaling 
-Watched You Got Mail
- Found a delicious Southern BBQ place in Seoul. Many thanks for Chantal. This place was so good. We had fried jalapeƱo mac and cheese balls, fried pickles, pulled pork and brisket sandwiches, fries, pork and beans, and bacon potato salad. I can't even wait to go back. Is next week too soon? 
- Matt and I had date night. We chose to go to Subway. We actually haven't been to Subway since living in the states, but I needed a cold cut sandwich in my life. I think we are adding this to our weekly menu. I miss sandwiches so much 
-Drank some yummy hot chocolate from Starbucks 
-Enjoyed the red cup and the visit with my hubby 

-Matt booked a hotel in Seoul for our upcoming anniversary- 4 years!!!! I have no idea where we are staying and I can't wait. 

And now we are watching Dr. Who and getting things ready for the work week.

Hustai National Park: Mongolia {Travel Tuesday}

Happy Tuesday Y'all! 

Today I wanted to share Hustai National Park with you guys. This was one of our stops on the first day of our tour. And this is where our first ger camp was. 

Hustai is one of the protected areas in Mongolia. It is filled with wildlife and it is a beautiful place to visit. One of the greatest things that is in the park are the Takhi wild horses. They were reintroduced to the park in the 90s and today there are over 220 takhi in the park. This is the only place in the world where these horses are in the wild. 

So we went out with our guide in search of these wild horses. We had the best luck because we saw 5 different groups of the horses. Our guide was amazing. He was spotting them left and right. For being an older gentleman- he had some amazing eyes! 
In the pictures below, you can see them in the distance. We didn't have the greatest lens, but we had binoculars- so when we were there we had the best views.

This was an amazing place for us to visit. We loved seeing Hustai National Park and we loved sleeping in a ger- but that's for another day!

Mongolia: Mini Sand Dunes

Happy Monday Y'all!
A couple of months ago, Matt and I took a trip to Mongolia. 

We decided to take a 3 day tour of central Mongolia and the National Parks. We booked our tour through Discover Mongolia, and it was amazing. I will be sharing more about our tour, but for now- let's talk mini sand dunes. 

Well, I don't want to talk- I want to show you. Mongolia is easily the most beautiful place I've seen. After living in Korea for over a year, we forgot how blue the sky can be. Mongolia was amazing. So quiet and clean (at least outside of Ulan Bator). We loved Mongolia and think everyone should put this on their travel list. 









I can't wait to share the rest of our trip with y'all- and hope you enjoyed this little preview.

Friday Letters 60

Happy Sunday Y'all. 

If you haven't noticed- I took a little blogging break this last week or so. I've currently be working on grad school stuff, and really didn't have the energy to put into the blog. The next month will be pretty busy getting in all the school stuff and trying to take advantage of the nice weather to explore a bit- but I will try to get some posts up now and then. 

Here's what we've been up to: 


- Taking part in wonderful Halloween activities (more on that soon) 
- Taking a trip to Seoul 
- Coke Floats and Hotel Transylvania
- Falling in love with the new show Selfie 
- Wandering around Home Plus with my love
- Getting snail mail from my wonderful Abuela and Papa
- Working on grad school stuff and being beyond stressed about it- I need one more letter of recommendation and it's been so hard getting in touch with one of my old professors- I wish I could just swing over to Hawaii and talk to him in person! 
- Trying to get my students more involved with my lessons
- Watching The Pioneer Woman 
- Having homemade BBQ 
- Eating yummy street food waffles
- Enjoying the beautiful Fall leaves
-AND BOOKING A TRIP TO THAILAND! 

Yes, the format of the letters has completely changed, but I felt like mixing things up. I was a little tired of the old letters.
