Royal Wedding

(I love this picture and if you have been or lived in London you know why!)


Well of course, I had to write a little bit on what I watched last night (yes I know it was Friday morning London time, but in Hawaii it was night time)!

Matt and I do not have cable so the last couple of weeks I had been paniking about how I would be able to watch the Royal Wedding! Now, I know that it would be rebroadcast and I would be able to watch it eventually.... but I wanted to watch it LIVE! So I found ABC on the internet and watched the live broadcast!

I watched the guests arrive, including the Beckhams.. I watched members of the Royal family come in, Elton John... and then Prince Harry and Prince William... the Queen... and then...... Kate! And her dress was beautiful! Everything was beautiful and what was even better was that I had been there... I knew the procession exactly. I had been to Westminster and the whole time I was explaining things to Matt. I know he did not really want to watch it, but he was a trooper.

Overall, I thought it was wonderful. It made me miss London more than ever, but I loved it. I loved the look on Prince William's face when he saw Kate for the first time... I loved the vows, the singing, everything!!!!

Later today I will try to put some pictures up of my favorites but for now I will leave you with this!

Easter Basket Cupcakes



Happy Belated Easter!

This Easter I wanted to try my hand at Bakerella's Easter Basket Cupcakes!
This looked like a project that I could do!

Matt and I were going to my aunt's house for Easter dinner and I wanted to bring something to show our thanks for all that she has done for us. So, to make sure I could actually make these cupcakes, I made a trail batch and brought them to work.

I think for my first try they look pretty dang good! Unfortunately, with Hawaii's humidity they did not last long. It is so hot and humid here, the frosting just started melting throughout the night. Next, time I will remember to put them in the refrigerator. But my friends at work said they tasted just fine!

Weight Watchers Cupcakes



I have been looking for healthier sweet recipes and I came across this one from weight watchers. I will get the recipe to you guys if you want it but here is a step by step of what I did:

Ingredients You Will Need:
Now what makes this recipe so good is that I made it sugar free and low-fat! If you are doing weight watchers one cupcake is 5 points! I was a little
nervous going into this because I have never made cupcakes, or anything for that matter, from scratch!
Mix your dry ingredients!
Mix your liquids!

After you mix everything together pour your mixture into the cupcake tins. Now, my mixture was a little thick- but I don't know if that was how it was supposed to be or I did something wrong... but at this point I just wanted to see how they would turn out! You put them in at 350 for about 20 minutes!
*Oh yeah and these were supposed to be red velvet but of course I forgot the red food dye so oh well!

This is what they looked like when they came out. For me this was just a trial run, so I just wanted to see how they tasted, not how they looked. And for so reason the cupcake tins were not working with me so hopefully next time! And they tasted great! They stuck a little to the wrapper, but not any more so than box cupcakes.

I am going to bring them to work tomorrow and see what others think. Matt says he likes them, but I can't tell if he is just trying to be nice.

Homesick

Although I have my BFFE (Best Friend For Eternity) with me, there are times when I get homesick. And it is in these times that I look back at my photos and videos of my family back in Georgia... and it is through this that I found some great videos! Check this one out!











Projects for the Summer

Since I have the next 12 weeks without school I plan on getting a lot accomplished! My CRAZY grandmother-in-law asked me if I would have an apron on and dinner on the table by the time Matt comes home... of course I said UH NO!

This summer is different because now Matt will be the one working and going to school, while I will just be working. Since we both will be working through dinner time we decided to just have easy meals around the house to grab on the go... Plus, if you know me you know I DON"T COOK!!!

So since I no longer have to worry about putting dinner on the table I have come up with some projects to do over the break!

1. Work on genealogy for the Fahey side of my family. Lately, I have been so interested in finding out about my dad's side so this will be a perfect time!

2. Putting photo albums together!!! I am soooo far behind at putting these together. Right now my biggest concern is LONDON! I can't believe in a few months it will have been TWO years! And of course I have my wedding.... and Hawaii.... and one that I want to do for my bff.... It's so much but if I just get a couple done I would feel so much better.

3. Work on my journal. I need to be so much better about this on a daily occurrence, but I really want to write down Matt and mine story before I start forgetting all the details!

4. Work on crafting! I have always wanted to be able to be the woman that can see a piece of ribbon and be able to make something out of it. Luckily, I have been looking at some blogs and there are some great tutorials and projects that I can get started on! Now don't worry, I am not going to be Holly the housewife... but I just want to be able to do some stuff!

5. Study for the GRE and Praxis II! This should probably be at the top of my list, but I can't be bothered!

Well, I think that is enough goals for right now!

My Dreams Are Comig True!

My younger brother, Joe, asked Malia, Matt's younger sister, to their Senior Prom!!!!!!! For those of you that know we you understand what a big deal this is! I have wanted little Malier and Joe Joe to get together for such a long time.... now I know this does not mean they are dating... but it is a step in the right direction.

And just a little background for you Malier and I have been friends since she was 12 (I was new in the ward and she was the only nice girl... even though I think I just scared her and she just wanted to be nice!) Anyway, since that friendship we always joked about wanting to be sisters... I told her the only way that would happen is if she married Joe! And of course, she told me I would have to marry Matt... which at the time I just laughed! Well, 6 years later we are sisters and I of course married Matt (who would have thought the skinny, nerdy, kinda strange boy I met at the age of 16 would be my future husband!)...

Anyway, this story is not about me...it's about the love that I can see blooming between Malier and Joe Joe... okay so I know I am being dramatic, but I am just so happy! And just so I don't get in trouble they are just friends.... (so they say).... and just a reminder... but Matt and I were 'just friends' too!

Okay, so by now you guys just want to hear the story... now I am not quite sure of the details but I do know that Joe called me one day last week and asked when Malia went to church. After some asking around, I let him know the time. He then told me he was going to take a bag of Hershey Kisses and lead a path up to her room (now this is not creepy because our families have been friends for a while and Joe is almost a permanent fixture at their house). Then inside her room he was going to spell PROM? with the Hershey Kisses!!!!! I know I can hear the sighs now :) And just a side note Joe is NOT a romantic at ALL so this was a HUGE gesture.. and from this I can see how much he cares for Malia... even if it is just friendship.... for now :)

My Little Cholo

So Matt had to go up to campus the other week to get his MAP (Master Academic Plan), to see when he would graduate. And of course in order to do this he needed to shave! Shave the beard that I dearly love!

Of course, I had to take pictures!

HAHAHAHAHAHA!

Matt really did not want to get rid of all his facial hair... and BYU allows the men to have mustaches (which results in a a lot of students looking like pedophiles)! However, as this picture proves, Matt cannot have a mustache! He had to shave it all off... but, at this point, he did not want anymore pictures! :)
